HOP™ Hearts of Palm Pasta with Sausage Ragu

Enjoy this KETO Friendly Hearts of Pasta with Ragu Sauce!

Serves: 4

Cook Time: 35 Minutes


  • 2 tablespoons of extra virgin olive oil, divided
  • 5 sausages, casing removed
  • 1 tablespoon of fennel
  • 1 medium carrot, grated
  • 2 tablespoons of garlic, finely chopped
  • 1 tablespoon oregano
  • 1 tablespoon red pepper flakes
  • 1 28-oz can diced peeled tomatoes
  • 1 can of HOP Hearts of Palm Spaghetti, rinsed and drained
  • 2/3 cups parmesan cheese, grated
  • Salt, to flavor
  • ½ cup parsley, finely chopped


  1. In a large skillet, heat 1 tablespoon olive oil over medium heat. Add sausage and fennel seeds and cook until brown for about 5 minutes. Add carrot and cook until sausage is fully cooked through for about an additional 5 minutes
  2. Add the additional tablespoon of olive oil to the skillet and stir in oregano, garlic and red pepper flakes and cook for about 30 seconds.
  3. Add the can of whole peeled tomatoes and stir for 5-7 minutes until sauce reduces slightly
  4. Stir in salt to flavor
  5. Reduce heat to medium-low, and add in HOP™ pasta, continuing to stir
  6. Stir in parmesan and parsley until combined for about 3 minutes
  7. Serve and garnish with additional parsley and parmesan
