HOP™ Hearts of Palm Pasta with Sausage Ragu
Enjoy this KETO Friendly Hearts of Pasta with Ragu Sauce!
Serves: 4

Ingredients:
- 2 tablespoons of extra virgin olive oil, divided
- 5 sausages, casing removed
- 1 tablespoon of fennel
- 1 medium carrot, grated
- 2 tablespoons of garlic, finely chopped
- 1 tablespoon oregano
- 1 tablespoon red pepper flakes
- 1 28-oz can diced peeled tomatoes
- 1 can of HOP Hearts of Palm Spaghetti, rinsed and drained
- 2/3 cups parmesan cheese, grated
- Salt, to flavor
- ½ cup parsley, finely chopped
Directions:
- In a large skillet, heat 1 tablespoon olive oil over medium heat. Add sausage and fennel seeds and cook until brown for about 5 minutes. Add carrot and cook until sausage is fully cooked through for about an additional 5 minutes
- Add the additional tablespoon of olive oil to the skillet and stir in oregano, garlic and red pepper flakes and cook for about 30 seconds.
- Add the can of whole peeled tomatoes and stir for 5-7 minutes until sauce reduces slightly
- Stir in salt to flavor
- Reduce heat to medium-low, and add in HOP™ pasta, continuing to stir
- Stir in parmesan and parsley until combined for about 3 minutes
- Serve and garnish with additional parsley and parmesan
