HOP™ Hearts of Palm Pasta Frittata

(Serves 3-4)


  • 5 large eggs
  • 1/4 cup 35% heavy cream 
  • 1 tbsp butter
  • 3 cloves garlic, minced 
  • 1 shallot, minced 
  • 4 button mushrooms, sliced 
  • 1/2 bunch basil, chopped 
  • 1/2 cup parmesan, grated 
  • 1 can HOP, drained and rinsed 
  • Salt and pepper


  • Preheat oven to 375°F.
  • In a mixing bowl, combine eggs, cream, parmesan and basil. Generously season with salt and pepper and whisk until combined. 
  • In an oven-safe cast iron pan, melt butter and add garlic, shallots and mushrooms, sauté for 5-10 minutes over medium heat. Remove from heat and add HOP in an even layer over cooked mixture. Pour egg mixture over HOP and bake in the oven for 15 minutes. Slice and serve hot.
