HOP™ Hearts of Palm Primavera Salad
(serves 2-3)
Ingredients:
- 1 can HOP, rinsed and drained
- 1/2 green bell pepper, diced
- 1/2 red bell pepper, diced
- 1/2 zucchini, diced
- 1/2 pint cherry tomatoes, quartered
- 1/4 red onion, diced
- 1 tbsp Italian seasoning
- 2 tbsp apple cider vinegar
- 3 tbsp olive oil
- Salt to taste
Directions:
Add all ingredients to a bowl and toss to combine.
*Option to heat in a frying pan and enjoy warm too!
