HOP™ with Vegan Rosé Sauce & Spinach

(serves 2)

Ingredients:⁠

  • 1 can HOP, rinsed and drained⁠
  • 1/2 cup cashews
  • 1/2 cup canned whole tomatoes
  • 1 tbsp tomato paste
  • 2 cloves garlic
  • 2 tbsp boiling hot water
  • 1/2 lb fresh spinach

Directions: ⁠
  • Add cashews, tomatoes, tomato paste, garlic and boiling water to the base of a blender. Add a generous amount of salt and pepper and blend until smooth. Add to a saucepan and simmer for 10 minutes. Add HOP and spinach, simmering until warm. Enjoy!
