HOP™ with Vegan Rosé Sauce & Spinach
(serves 2)
Ingredients:
- 1 can HOP, rinsed and drained
- 1/2 cup cashews
- 1/2 cup canned whole tomatoes
- 1 tbsp tomato paste
- 2 cloves garlic
- 2 tbsp boiling hot water
- 1/2 lb fresh spinach
Directions:
- Add cashews, tomatoes, tomato paste, garlic and boiling water to the base of a blender. Add a generous amount of salt and pepper and blend until smooth. Add to a saucepan and simmer for 10 minutes. Add HOP and spinach, simmering until warm. Enjoy!
